Aam Panna is a summer drink made and drank primarily in the northern part of India. It's known for its heat resisting properties and is very delicious and easy to make.
2 Green Mangoes (you can use ripe mangoes just remember the drink will be sweeter so cut down on the jaggery)
2 Cups Water
1/2 Cup Jaggery (you can use raw sugar)
2 Tbsp Coconut Sugar
1 Tsp Cumin
1/4 Tsp Black Pepper
1.5 Tsp Black Salt or Himalayan Salt (I used Black Salt)
1/2 Cup Water
1. Wash mangoes and add 2 cups of water and pressure cook mangoes until boiled, about 1-2 whistles. Alternatively you can cook mangoes by steaming them or boiling directly in a pot.
2. Strain and let mangoes cool down, you can discard the water or use it to grind mango pulp. While mangoes are cooling, in a pan roast cumin seeds and pepper until slightly fragrant and nutty. Crush it in Mortar and Pestle.
3. Peel mangoes and keep pulp and discard the skin. 2 mangoes gives you 1.5 cup of pulp. To this add cumin seeds and pepper, black salt, jaggery and coconut sugar.
4. Blend this mix with 1/2 cup water until smooth. You can store this mango paste in fridge for a week and use when you are ready to make your drink.
TO MAKE AAM PANNA DRINK
A) In a glass add lots of ice cubes and 2 Tbsp mango paste.
B) Top it with cold water and sprinkle some more salt and add mint if you want. You can even sprinkle some of our Royal Chaat Masala.
You can adjust salt and sugar to make it sweeter or saltier.
