Veg Coconut Curry

Recently, I remembered a dish my friend made when she stayed with us during pandemic for few weeks. And so I asked her how did she make it and she reminded me how simple it was with simple ingredients. So with her help and little bit of my own culinary intuition, I made this dish and honestly it turned out to be absolutely amazing. I ate it the next day as leftover with same amount of enthusiasm.

Fresh Turmeric Chutney

INGREDIENTS 100g Turmeric fresh Washed & Grated  2tbsp Roasted Chana (You can get this from Indian grocer online or instore) 1tsp Coriander seeds  1/2tsp Black Pepper 2 Dry Red Chillies 2 Cloves of Garlic chopped 1 Small brown onion finely chopped 2 Tbsp Oil (I used mustard oil, you can use olive oil, coconut oil, peanut oil etc)  1 Tsp Salt  1 Tsp Sugar  1 Tsp Mustard seeds  One sprig of Curry leaves 1 Tbsp Toasted peanuts (optional)   METHOD 1. Dry roast coriander seeds, pepper, chilli. Add Chana and grind into fine powder. 2. In a pan add 1 Tsp oil and fry garlic, onion. Once onions are soft add grated turmeric. Poha

Poha is a quick Indian Breakfast. Different regions of India makes this dish differently. It's made with flattened rice. The process of making flattened rice is interesting one. The rice from paddy is de-husked then par-boiled and then pounded to flakes. This processing makes it a quick cooking rice flake. It's super delicious and nutritious.
