Fresh Turmeric Chutney


INGREDIENTS

100g Turmeric fresh Washed & Grated 

2tbsp Roasted Chana (You can get this from Indian grocer online or instore)

1tsp Coriander seeds 

1/2tsp Black Pepper

2 Dry Red Chillies

2 Cloves of Garlic chopped

1 Small brown onion finely chopped

2 Tbsp Oil (I used mustard oil, you can use olive oil, coconut oil, peanut oil etc) 

1 Tsp Salt 

1 Tsp Sugar 

1 Tsp Mustard seeds 

One sprig of Curry leaves

1 Tbsp Toasted peanuts (optional)

 

METHOD

1. Dry roast coriander seeds, pepper, chilli. Add Chana and grind into fine powder.

2. In a pan add 1 Tsp oil and fry garlic, onion. Once onions are soft add grated turmeric. Cook for 10 min stirring occasionally. 

3. Then add salt, sugar, mix well. Turn off the heat and let it cool for 10 min.

4. Grind this onion, garlic, turmeric mix to coarse paste.

5. Mix it with dry spices and chana powder. 

6. On medium heat, in a small pan heat remaining 1 Tbsp oil and add mustard seeds until it splutters. Then add curry leaves, mix and pour it on the chutney. Add toasted peanuts if using & give it all a mix. Enjoy as a condiment. Stays fresh in fridge for a week.
