Sambhar is a south indian lentil based stew, and every state in the south of India has its own little secret recipe for the sambhar. In those states every town, village, home has their own recipes, and so we created ours inspired by the cuisine of Udupi, a small city on the southwest coast of India in the Tulunadu region. The dosa you see in your Indian restaurant’s menu is believed to have originated from Udupi. Its cuisine is versatile and focuses largely on seasonal produce due to their very strict food restrictions during few months in monsoon.
