Dhokla is a popular Gujurati Snack from Gujurat. This Dhokla is made with Semolina, they are also made with Besan. This recipe is healthy, quick and very tasty. I make this often and enjoy it with my chai.
Serves 4
Duration 30- 40 min
INGREDIENTS
1 Cup Semolina
1 Cup Yogurt
1 Tsp Ginger crushed
1 Green Chilli crushed
1 Tsp Salt
1 Tbsp Lemon Juice
1 Tsp Baking Soda
1 Tbsp Chopped Coriander
1/2 Tsp Chilli Powder
For Tempering
1 Tsp Mustard Seeds
1 Tsp Cumin Seeds
1 Sprig of Curry leaves
4-5 Green Chillies thinly sliced
1 Tbsp Sugar
1/2 Cup Water
1 Tbsp Oil
METHOD FOR STEAMING
1. In a bowl mix semolina, yogurt, ginger, chilli, salt, lemon juice, coriander. Let it sit for 10 min.
2. Meanwhile, grease a small round cake tin and keep aside. Add 2 cups of water in a pot. Place a small trivet or small bowl upside down inside the pot before you begin to heat it. Let the water come to a gentle boil on medium heat.
3. After 10 min add baking soda to the batter and mix well. Pour the batter in greased cake tin and spread evenly. Sprinkle chilli powder and carefully place the tin on top of trivet.
4. Cover the lid and steam it for 15-20 min, or check with a toothpick until it comes out of clean. Remove and let it cool for 10 min. While its cooling make the tempering.
METHOD FOR TEMPERING
In a small pot or pan on medium heat add oil. Once oil is hot add mustard and cumin seeds. Let it splutter, then add curry leaves, followed by green chillies. Mix for 5 - 10 sec then add sugar, let it all cook for 2 min, then add water. Mix and turn off the flame and then gently pour it on the dhokla. You can pour it directly in the mould or take out the dhokla on plate, slice it and then pour on it.
